The EUDI wallet is advertising that it can prove your ID on device and just send a “is over 18” confirmation. So at least in theory, the wallet should provide verification without giving your ID to whatever service you want to use. I do doubt however, that ot will work that smoothly and securely in practice

Couldn’t you move the mouse to 1920,1080 or whatever your resolution is for the same amount of time to correct the movement? Since you can move the mouse in millisecond speeds it should barely be noticeable

Can you explain why you would think Steam is so bad? I would argue they’re pretty fair, especially with the option to buy steam cards for cash to not disclose your personal data. Does the client do some unsavory shit?
